1 - Collar Cut - This is the piece of fish that is closest to the head of the fish.

2 - Upper Center Cut - This is the piece of fish that is just after the collar cut.

3 - Lower Center Cut - This is the piece of fish that is just before the tail cut.

4 - Tail Cut - This is the final piece of fish on a fillet.
