Marinade for Wild Game Meat |
| Recipe Ingredients:
- 3 Lemons, juice only
- 1 Orange, juice only
- 1/2 cup Vinegar
- 2 cup White Wine or Cider
- 1 Onion, sliced
- 1 Carrot, diced
- 2 Stocks Celery, diced
- 1 Clove Garlic, mashed into a paste
- 4 sprigs of Parsley
- 1 Bay Leaf
- 2 Chili Peppers, seeded & veined
- Dash Nutmeg

| Recipe Preparation:
In a large, flat pan (enameled ware is best) combine
all ingredients and stir well. Next lay your meat in marinade
and leave it for several hours - upto - overnight (turn
frequently). For venison, elk, caribou or moose roasts
you will need to brush the meat well with oil before being
seared. Remove meat from marinade and place into roasting
pan. Occasionally baste with remaining marinade while
cooking. |
