Shrimp & Asparagus Stir Fry Recipe

Recipe Ingredients:

  • 1 lb. Fresh Asparagus, cleaned/bottoms removed
  • 1 lb. Side Stripe Shrimp, cooked
  • 1 cup Fresh Mushrooms, sliced
  • 1/4 cup Purple Onion, sliced & cut in half
  • 2 Green Onions, chopped
  • 2 Tomatoes, cut in thin wedges
  • 2 1/2 tbsp. Soy Sauce
  • 1 tbsp. Worcestershire Sauce
  • 1 tbsp. Water, cold
  • 1 clove Garlic, minced
  • 1/4 tsp. Salt
  • 1/8 tsp. Pepper
  • 1 tsp. Cornstarch
  • Oil for Stir Frying

Recipe Preparation:

Slice asparagus diagonally in just over 1 inch sections. Slice green onion strips in sections about 1/2 inch long and cut purple onion slices in half. Mix water and cornstarch, stir well before adding worcestershire sauce and soy sauce; set mixture aside. In a large skillet heat oil then add garlic, green onions, Purple onions and asparagus. Stir fry for 4 minutes (longer if asparagus is thicker) then add mushrooms and continue stir frying for an additional minute. Season with salt and pepper. Pour mixture into skillet and stir well with vegetables. Cook until sauce thickens then add tomatoes and shrimp (precooked) and fry until heated through.
