Vegetable Skillet Recipe |

Recipe Ingredients:
- 1 lb. Salmon Fillets, chuncked
- 1 Onion, chopped
- 1 Green Pepper
- 1 Red Pepper
- 1 Yellow Pepper
- 4 lg. Tomatoes, chopped
- 6 lg. Mushrooms, sliced
- 6 cloves Garlic, minced
- 1/4 cup Extra Virgin Olive Oil
- 1 cup White Wine
- 1/2 cup Blue Cheese, crumbled
- 2 tbsp. Italian Salad Dressing

Recipe Preparation:
Heat the extra virgin olive oil in a large skillet or
wok. Add minced garlic to oil and cook for 1 minutes.
Next add in vegetables: onions, peppers, tomatoes and
mushrooms; simmer for 10-12 minutes. Push vegetables to
the side of the skillet and place salmon chunks in open
space; allow salmon to cook for 5-6 minutes before gently
stirring salmon into vegetables. Allow mixture to cook
for another 5-6 minutes or until salmon is fully cooked.
Add wine to mixture and cook for 1 minute, remove from
heat, gently stir in blue cheese and allow to rest for
3-5 minutes before serving. |
