Rhubarb Crunch |

Recipe Ingredients:
- 4 cups Alaskan Rhubarb
- 1 cup Flour
- 1 cup Dry Oats
- 3/4 cup Brown Sugar
- 1 1/4 cup Sugar
- 1 cup Water
- 1/2 cup Butter, melted
- 2 tbsp. Cornstarch
- 1 tsp. Cinnamon
- 1/2 tsp. Nutmeg
- 2 tsp. Vanilla Extract
- Red Food Coloring, 3-4 drops

Recipe Preparation:
Use a large bowl to combine flour, oats, brown sugar,
cinnamon, nutmeg and butter. Mix well (until crumbly).
Place half of crumbly mixture in a 9 inch. (square) baking
pan. Pour rhubarb over crumbly mixture. In a small sauce
pan combine sugar and cornstarch. Next add water and cook
until thickened. Cook an additional 2 minutes then remove
from heat and stir in vanilla and food coloring (if desired).
Pour mixture over the top of rhubarb then top with remaining
half of crumbly mixture. Bake in a preheated 350 degree
oven for approximately 1 hour. |
