Fried Scallops |

Recipe Ingredients:
- 2 lbs. Ed's Sea Scallops
- 1-2 cups Flour, as needed
- 1/2 cup Olive Oil
- 3 cloves Garlic, chopped finely
- 1/2 cup Parsley, chopped
- Salt & Pepper to taste
- Lemon Wedges, garnish

| Recipe Preparation:
Wash and dry the scallops that you have cut in half and
roll them in flour. Heat the olive oil in a large skillet.
Add the scallops and cook them very quickly, tossing them
lightly in the hot oil and shaking the pan so that the
scallops do not stick. Add the garlic and mix it in well.
Then season the scallops with salt and pepper to taste.
Just before you remove the scallops add the parsley and
stir only to coat the scallops. Garnish with lemon wedges. |
