Hollandaise Sauce |

Recipe Ingredients:
- 1/2 cup Butter
- 1/4 cup Water, hot
- 1/4 tsp. Salt
- 4 Egg Yolks
- 2 tbsp. lemon juice
- 1/4 tsp. Cayenne

Recipe Preparation:
Melt butter with water, salt and cayenne in top of a
double boiler. Beat egg yolks slightly. Blend a small
amount of butter mixture into beaten egg yolks: then add
to remaining butter. Place the top of the double boiler
over hot water. Beat mixture with beater until thick and
smooth. Blend in lemon juice. Serve immediately.
Tip: If the sauce curdles, add 1 tsp. hot
water and blend well. |
