Spicy Halibut Enchiladas Recipe

Recipe Ingredients:

  • 2 cups Halibut, cooked, cubed
  • 1 pkg. Cream Cheese
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 cup Monterey Jack Cheese, shredded
  • 1 jar Hot Salsa
  • 1 can Black Olives, diced
  • 3-4 Green Onions, diced
  • 1/2 Tomato, diced
  • Dash Tabasco
  • Flour Tortillas

Recipe Preparation:

In a medium sauce pan mix together cream cheese, monterey jack cheese an 1/2 of salsa, melt together and mix well. Add halibut and olives and 1/2 of green onions. Mix well. Lightly coat a casserole dish with vegetable spray then pour 1/2 of remaining salsa into bottom of dish. Fill flour tortillas evenly with halibut mixture and place in baking dish. Once filled, cover with remaining salsa, 3/4 of cheddar cheese. Bake at 300 degrees for about 25-30 minutes or until heated thoroughly. Garnish with remaining green onions, fresh diced tomato and cheese, serve hot.
