Halibut Enchiladas Recipe |

Recipe Ingredients:
- 2 cups Halibut, cooked, cubed
- 1 pkg. Cream Cheese
- 1 cup Sharp Cheddar Cheese, shredded
- 1 cup Monterey Jack Cheese, shredded
- 1 jar Hot Salsa
- 1 can Black Olives, diced
- 3-4 Green Onions, diced
- 1/2 Tomato, diced
- Dash Tabasco
- Flour Tortillas

Recipe Preparation:
In a medium sauce pan mix together cream cheese, monterey
jack cheese an 1/2 of salsa, melt together and mix well.
Add halibut and olives and 1/2 of green onions. Mix well.
Lightly coat a casserole dish with vegetable spray then
pour 1/2 of remaining salsa into bottom of dish. Fill
flour tortillas evenly with halibut mixture and place
in baking dish. Once filled, cover with remaining salsa,
3/4 of cheddar cheese. Bake at 300 degrees for about 25-30
minutes or until heated thoroughly. Garnish with remaining
green onions, fresh diced tomato and cheese, serve hot. |
