Recipe Ingredients:
- 4 Salmon Fillets (roughly 2 lbs.)
- 2 cups Rice, cooked
- 12 tomatillas, halved
- 1/2 Onion, sliced
- 1/2 to 1 Habanero (or to taste), minced
- 3 tbsp. Lime Juice
- 1/2 tsp. Sea Salt
- 1/2 tsp. Pepper
- 1/4 tsp. Sage
- 1/4 tsp. Cumin
- 1/8 tsp. Ginger
- 2 cups water or seafood stock

Recipe Preparation:
Marinate salmon fillets in lime juice and set aside.
In a large skillet cook onions, habanero and tomatillos
until tender. Season salmon fillets with dry ingredients
and place in skillet on top of other ingredients. Add
stock and simmer for about 5 minutes, add salmon, cover
and continue to simmer until done. Serve salmon over rice. |
