Halibut Cacciatore Recipe |

Recipe Ingredients:
- 1 1/2 lbs. Halibut Chunks, 2x2"
- 1 Onion, sliced
- 2 cans Italian Tomatoes
- 2 1/2 cups Bread/Cracker Crumbs
- 2 Eggs
- 1/4 cup Parmesan Cheese, grated
- Oil for Frying
- Salt & Pepper to taste

Recipe Preparation:
Set aside 1/2 a cup of the crumbs. In a small bowl lightly
scramble the eggs. Dip halibut in eggs then into remaining
crumbs. Place battered chunks in hot oil and lightly brown
and remove from heat, drain. Place lightly browned chunks
in a 2 quart baking dish and pour tomatoes over halibut,
add salt, pepper and onion, mix carefully. Sprinkle remaining
crumbs over top of mixture then sprinkle cheese. Bake
in a preheated 325 oven for 20 minutes or until crispy
on top. |
