Recipe Ingredients:
- 4 Shallots, chopped finely
- 1/2 lb. Unsalted Butter, chilled and diced
- 1/3 cup White Wine, dry
- 1/3 cup White Wine Vinegar
- Salt and Pepper to taste

Recipe Preparation:
Boil wine, vinegar, shallots and a pinch of salt (use
a stainless steal saucepan). Cook until only enough liquid
remains to moisten the shallots. Remove pan from heat
and allow to cool. Season with salt/pepper and place back
on very low heat. Stir in butter a bit at a time until
mixture is creamy. Remove from heat. Makes approximately
a 1 1/2 cups. |
