Ed's Bearnaise Sauce

Recipe Ingredients:

  • 1/3 cup Water
  • 1 1/2 tbsp. Tarragon Vinegar
  • 1 Peppercorn, crushed
  • 1/2 Onion, Sliced
  • 3 Egg Yolks, slightly beaten
  • 1/4 cup Butter
  • 1/4 tsp. Salt
  • 1/8 tsp. Paprika

Recipe Preparation:

Combine water, vinegar, peppercorn and onion in a small saucepan. Heat to boiling. Remove the onion. Place egg yolks in the top of a double boiler and gradually add hot liquid. Cook over hot, but not boiling water, stirring constantly until thickened. Remove from heat and add butter, 1 tbsp. at a time, salt and the paprika. Stir vigorously. Serve immediately.
