Bearnaise Sauce |

Recipe Ingredients:
- 1/3 cup Water
- 1 1/2 tbsp. Tarragon Vinegar
- 1 Peppercorn, crushed
- 1/2 Onion, Sliced
- 3 Egg Yolks, slightly beaten
- 1/4 cup Butter
- 1/4 tsp. Salt
- 1/8 tsp. Paprika

Smoked Salmon

Recipe Preparation:
Combine water, vinegar, peppercorn and onion in a small
saucepan. Heat to boiling. Remove the onion. Place egg
yolks in the top of a double boiler and gradually add
hot liquid. Cook over hot, but not boiling water, stirring
constantly until thickened. Remove from heat and add butter,
1 tbsp. at a time, salt and the paprika. Stir vigorously.
Serve immediately.
