5. What is the shelf life of thawed
vacuum sealed seafood?
You don’t gain any shelf life per
say for fresh uncooked seafood in a vacuum sealed pouch if you
keep it refrigerated. If kept refrigerated, smoked salmon will
last about 30 days unopened, but once opened - only about 3 days.
The reason for that is that fresh fish isn’t cooked but
smoked salmon or smoked halibut is. Cooked products last longer
in a vacuum sealed pouch because most of the bacteria have been
killed during the cooking process. Nova lox is different yet because
it’s not cooked but cured thoroughly with salt which retards
bacteria growth. It can be safely kept refrigerated about 7-10
day unopened, but once you open it, you should consume it within
2-3 days.
