20. Does vacuum sealed smoked salmon
or halibut need to be refrigerated?
YES!! There are some smoked salmon products
that don’t need refrigeration. They are a retort pouch which
is the same thing as canning. It kills all the bacteria in the
smoked fish with heat but in return you get a product that tastes
canned. Our smoked salmon and halibut need refrigeration because
they are only cooked to 150 F. in the smoking process. If smoked
salmon is kept frozen and then thawed when needed, you will experience
what smoked salmon was meant to taste like. Keep in mind that
all vacuum sealed products should be handled properly (keep refrigerated
to 38 F. or below) to ensure your safety.
