10. What to do once it is filleted?
a. You should rinse off
any blood viscera left on the meat.
b. If you’re going to do your own vacuum
sealing, do it now and freeze the fillets immediately.
c. If you need to store the fillets for transport,
put them in a plastic bag and put the bag on ice. NEVER put raw
flesh directly on ice, as the ice melts, turns to water and milks
all the flavor and color from the meat.
